Description

The preservation of food by irradiation is starting to become a reality. In addition to cost benefits, substantial energy savings can be effected through radiation processing. Both radioactive sources and accelerators can be used for the purpose, each having its advantage and limitations. Some of the most promising applications of food irradiation are discussed in this article, as well as factors influencing the commercialisation of food irradiation, and possible applications of electron beam processing in food irradiation
