Preservation of Indian mackerel (R. kanagurta) by gamma radiation

  • 1. Jadavpur Univ., Calcutta (India). Dept. of Food Technology and Biochemical Engineering

Description

The effect of ionization radiation on the storage life of Indian mackerel (R. Kangurta) was studied. Irradiation at 0.1 M rad extends the storage life of mackerel by about 7 to 8 days at 0-20C over the control, whereas 0.15 M rad increases the storage life by about 14 days over the control under identical conditions of storage. Empirical relations have been worked out between organoleptic ratings, total volatile nitrogen and free fatty acid. (auth.)
