Description

A short history of ionizing radiation application for food preservation as well as the international organization activities in the study of healthy aspects of irradiated food has been performed. The basic knowledge on the radiolysis of the main components of food e.g. water, carbohydrates, proteins and lipids has been reviewed. The quality of the irradiated food products has been discussed in aspects of toxicity, bacteriological safety and its nutritiousness as well. 4 refs, 1 tab
