Chemical variations observed in irradiated, treated with IPC and control potato tubers

Description

The content in soluble sugars, ascorbic acid and phenolic acids of potato tubers preserved by irradiation and IPC, during a storage period of five months are studied. In the irradiated tubers, soluble sugars increased immediately after the irradiation, in relation to the control tubers reaching inferior values to those reached by the control tubers, at the end of the storage period. The content in ascorbic acid is generally kept higher in the irradiated and IPC treated tubers than in the control tubers and the content in phenolic acids increased in the irradiated and IPC treated tubers by immediate effect of this treatment.(author)

Abstract (Spanish)

Se estudia el contenido en azucares solubles, acido ascorbico y acidos fenolicos de tuberculos de patata conservados por irradiacion e IPC, durante cinco meses de almacenamiento. En los tuberculos irradiados aumentaron los azucares solubles respecto al testigo inmediatamente despues de la irradiacion, alcanzando valores inferiores a los de los tuberculos testigo al final del periodo de almacenamiento. El contenido en acido ascorbico se mantuvo en general superior en los tuberculos irradiados y tratados con IPC que en los testigo, y el contenido en acidos fenolicos aumento en los tuberculos irradiados y tratados con OPC por efecto inmediato del tratamiento.
