Spin trapping study of gamma radiolysis of saccharose

Description

The radicals induced in sucrose by gamma-irradiation, in the solid state at different temperatures or in aqueous solution at 00C, have been studied by the spin trapping method. Electron spin resonance (ESR) combined with high performance liquid chromatography (HPLC) followed by spectra analysis with a simulation program (VOYONS), revealed seven main radical species. Their nitrogen and hydrogen splitting constants were compared with those obtained from other unlabelled and 13C specifically labelled carbohydrates. Abstract (French)

Les radicaux induits par irradiation gamma du saccharose, en phase solide a differentes temperatures et en solution aqueuse a 00C, ont ete etudies par la methode de piegeage de spin. La Resonance Paramagnetique Electronique (RPE), combinee a la Chromatographie Liquide Haute Performance (CLHP) et suivie de simulations sur micro-ordinateur a l'aide du programme VOYONS, a revele sept especes radicalaires. Leurs caracteristiques spectrales sont comparees avec celles obtenues a partir d'autres sucres, specifiquement marques au 13C ou non. La structure chimique de quatre de ces especes radicalaires est discutee
