Effects of ionizing radiation on formation of degradation in fat component of food-stuffs

Description
The effects of ionizing radiation on the formation of degradation products in the fat component of foodstuffs were studied, in particular its effect on the formation of volatile compounds, primarily hydrocarbons, in sunflower oil and lard irradiated with doses of 1-6 Mrad. It is concluded that ionizing radiation does affect the formation and volume of volatile components of fats, the amount of these components being proportional to the radiation dose. (E.T.)
