Development of Food Processing Technology Customer-oriented Purposed Foods Using Radiation Fusion Technology

Description

○ 35 prototypes (27 types of patient foods, 7 types of space foods, and a set of emergency food) of customized foods were developed using radiation technologies. ○ 21 patents of the core technologies for quality improvement of the developed products has been filed and transferred to 4 companies. - This achievement will contribute to expand the food and irradiation industries, because the "customer-oriented food processing technology merged with irradiation technology" is located in a creative and challenging field. - Moreover, it is expected that the fusion technology will contribute to the promotion of public welfare and the revitalization of related industries. ○ For the commercialization of radiation food technology and the harmonization with the international standards, we proposed an amendment of Food Code to the Korean Ministry for Food and Drug Safety after collecting opinions from experts in a workshop. - Allowance of X-rays in food irradiation as one of radiation sources applicable to food pasteurization will make improvement of domestic management standard system. - The research data regarding the effect of X-rays on bacteria and food quality, identification properties, and toxicological safety are expected to improve the national technology level. ○ Through the implementation of this project, 59 research papers were published and 17 media reports were used to promote the excellence of the fusion technology between radiation and food engineering technology. ○ Through the attending in IAEA Coordinated Research Project (CRP) for development of customized foods for immuno-compromised patients using radiation technology, we have established an international cooperation network and have been participating in the new CRP for the development of X-ray food irradiation technology.
