Water activity and relaxation time in barley malt

Description

The structural changes and enzymatic reactions have been studied in barley grains during brewery technological processes. The water activity, content of alcohols in gain has been determined by spectrophotometry. Spin-lattice and spin-spin relaxation time have been measured by means of pulsed NMR.
