Development of a pulp for industrial use from the waste generated during the processing of pineapple juice in the company Florida Products S.A
Description
A pulp for industrial use was developed from the waste obtained from the processing of pineapple juice in the company Florida Products S.A. The formulation of the pineapple pulp was established from preliminary tests, using the waste generated in the company. The scaling of the pineapple pulp production process was carried out at the pilot plant level. The total yield (% m/m), Ph, titratable acidity (g citric acid /100 g), soluble solids (Brix degrees), color, moisture (% m/m), and viscosity (cP) were evaluated in the pulp. The black color parameter (L*) changed significantly during the scaling stage. The use of the pulp developed was evaluated as raw material for the elaboration of four products (a jam, a snack, a yogurt topping and a sweet and sour sauce) at the pilot plant scale. The acceptance of these products was determined by sensory analysis with consumers. The physical-chemical, sensory and microbiological stability of the pineapple pulp was evaluated during storage at room temperature (approximately 25 degrees celsius) and at refrigeration temperature (4 degrees celsius)

Una pulpa para uso industrial fue desarrollada a partir de los residuos obtenidos del procesamiento de jugo de pina en la empresa Florida Products S.A.. La formulacion de la pulpa de pina fue establecida a partir de pruebas preliminares, utilizando los residuos generados en la empresa. El escalamiento del proceso de produccion de la pulpa de pina fue realizado a nivel de planta piloto. El rendimiento total (% m/m), pH, acidez titulable (g acido citrico/100 g), solidos solubles (grados Brix), color, humedad (% m/m), y viscosidad (cP) fueron evaluados en la pulpa. El parametro de color negro (L*) cambio significativamente durante la etapa de escalamiento. El uso de la pulpa desarrollada fue evaluada como materia prima para la elaboracion de cuatro productos (una mermelada, un bocadillo, un topping para yogurt y una salsa agridulce) a escala de planta piloto. La aceptacion de estos productos fue determinada mediante analisis sensorial con consumidores. La estabilidad fisico-quimico, sensorial y microbiologica de la pulpa de pina fue evaluada durante el almacenamiento a temperatura ambiente (aproximadamente 25 grados centigrados) y a temperatura de refrigeracion (4 grados centigrados)Additional details
