Enterprise Environmental Management: Calculation of the carbon footprint in the wine industry
Description
The carbon footprint is an environmental indicator that attempts to quantify the amount of greenhouse gases (GHG) emissions. Its measurement is a tool to work under the concept of eco-efficiency and opportunities to reduce energy consumption can be identified, since the latter is the main source of GHG emissions worldwide. This paper applies the pas 2050:2011 methodology for measuring the carbon footprint of the production of white wine. It excludes emissions associated with human energy inputs to processes, transport of consumers to the point of sale and transportation provided by animals. However, considering all the emissions involved with the product life cycle. In this work, a spreadsheet was obtained in order to calculate the carbon footprint of any white wine production, regardless of size and process. An estimate of GHG emissions was included, considering all possible variants in the process, defining the limits of the enterprise and operations to evaluate, from the harvest to final disposition.
