The non-exchangeability of oxygen between ethanol and water in a simulated wine
Description
The possibility of oxygen exchange between water and ethanol in a simulated wine at pH3 (that of wine) was studied using a stable isotope method. After 8 weeks at temperatures of between 4 and 800C no exchange was found to have occurred. Additionally it was found that using the carbon dioxide equilibration technique it was possible to directly measure the 18O/16O ratio of water in a water/ethanol mixture without first separating the ethanol.
