Identification of irradiated potatoes by electrical measurements

  • 1. National Food Research Inst., Tsukuba, Ibaraki (Japan)

Description

The magnitude, resistance and reactance of impedance of potato tuber were significantly influenced by gamma-irradiation and were dependent upon dose. Although these 3 impedance parameters varied with the type and size of electrode, a normalize parameter such as impedance ratio at two different frequencies eliminate the influence of type and size of electrode. Measuring temperature of 20-25degC resulted in the largest difference between unirradiated and irradiated potatoes. (author)
