Description

The radiation stability of vitamins in irradiated foodstuffs is important from a nutritional point of view. Some vitamins are considered to be sensitive to ionizing radiation, although this review shows that much depends upon the nature and the composition of the food system. Many studies have been concerned with the changes in vitamin content brought about by irradiation though there have been relatively few attempts to identify and quantify the degradation products of vitamins which are formed on irradiating simple solutions or complex food products
