Acceleration of aging processes of cognac alcohol under the action of gamma radiation

Description

The paper reports results of studies aimed at speeding up the aging of brandy alcohol by means of gamma radiation. In the course of the studies, the optimal doses for irradiating brandy alcohols obtained from oak extracts and wood were established, and their effects on the composition and taste of alcohols in different experimental treatments were examined. Also, schemes for separate and combined irradiation of brandy alcohols and other materials were developed, and the effects of irradiated wood and oak extracts on the composition and taste of separately irradiated young brandy alcohols were studied.
