Neutron stars: observing the properties of high-density nuclear matter

This talk reviews current understanding of the possible states of cold high-density matter found in the interiors of neutron stars - from the crust to the nuclear matter core, to exotic states including meson condensation, normal and strange quark matter, and quark droplets - and discusses observations of neutron stars as probes of high-density matter.
