Endurance of hygienic safety and quality on prepared meal by irradiation

The project titled 'utilization of irradiation to ensure the safety and quality of the prepared meal' was a contract research project supported by International Atomic Energy Agency. This paper reviewed the advancement of irradiation effects on the microbial safety, nutrition and sensory quality of different kinds of prepared food staff in the participating countries. The problems found in the past research were discussed. In order to accelerate the utilization of irradiation in the production and consumption of prepared food staff in China, some ideas and suggestions were also submitted. (authors)
