The author sketches the procedures at present available for the detection of the use of irradiation in food preservation and discusses their development and potential and the future organisation of facilities. Methods mentioned are e.s.r. techniques in the analysis of poultry products competition assays using radiolabelled thymine products and the use of 32P post-labelling of modified nucleosides in DNA, analysis of DNA damage in peeled prawns and wheat, radiolytic degradation of lipid materials, and thermoluminescence techniques.
