Description
Present article is devoted to study of influence of a method of obtaining on physicochemical parameters and properties of pectin polysaccharides of various vegetable raw materials. Polysaccharides have been obtained by means of hydrolysis-extraction, quick extraction and acid extraction methods. Esterification rate and sorption capacity of obtained polysaccharides has been defined. It has been defined that using of various methods of obtaining of pectin polysaccharides allows to optimize the output and parameters of end product.
