AbstractAbstract
[en] The actomyosin system of the ''Merluccius merluccius hubbsi'' fillet exposed to a dose of 0,50 Mrad gamma radiation was studied. The experiment was performed in order to evaluate the physical properties of these proteins from fillet that has been irradiated to extend its storage time at 4 deg C. The proteins extraction was made immediately after irradiation; at the same time, control samples were processed. A Spinco L2-65 Ultracentrifuge with a Schlieren Optics Accessory was used for velocity sedimentation measurements on the protein solutions. The results show that there are no changes in the sedimentation diagram of actomyosin system from irradiated fillet. (author)

Se analizo el sistema actinomiosina en filetes de merluza (Merluccius, merluccius hubbsi) sometidos a 0,50 Mrad de irradiacion gamma. Esta experiencia fue llevada a cabo para evaluar las propiedades fisicas de estas proteinas, en filetes irradiados. La extraccion proteica del filete fue realizada inmediatamente despues de irradiado, procesando al mismo tiempo muestras controles. La velocidad de sedimentacion de las proteinas se determino en una ultracentrifuga Spinco L2-65 equipada con sistema optico. Los resultados experimentales demostraron que la dosis de 0,50 Mrad de radiacion gamma no afecta las proteinas del sistema actinomiosina. (autor)Original Title
