[en] The article presents results of hydrolysis proto pectin apples, an orange and a basket of sunflower depending on ph a solution. The reaction products are divided into three fractions conditionally named as micro gel, pectin substances and oligosaccharide. It was shown that the high-quality pectin extracted from orange, but high percentage of carboxylic group in the sunflower pectin allow it to by used as a drug delivery materials
