AbstractAbstract
[en] The conservation of food has always been a major concern for humans. Methods allowing it have appeared regularly over the centuries, including ionization. Ionization of food consists of exposing foodstuffs to radiation of sufficient energy to create ions. The effect of these on the biological agents present in the foodstuffs generally makes it possible to prolong the life of the foodstuffs and to improve the microbiological safety of these. The nature and the properties of the radiation used are obviously at the origin of the expected effects, but also of a wide societal controversy and a specific regulation. This bibliographical summary aims to take stock of this method of preserving foods in terms of the nature of the radiation used, their effects on micro-organisms and applications of this technique. La conservation de la nourriture a toujours ete une preoccupation importante pour l'Homme. Des methodes le permettant sont regulierement apparues au cours des siecles, parmi lesquelles l'ionisation. L'ionisation des aliments consistent a exposer les denrees alimentaires a un rayonnement d'energie suffisante pour y creer des ions. L'effet de ces derniers sur les agents biologiques presents dans les denrees permet generalement de prolonger la duree de vie des aliments et d'ameliorer la securite microbiologique de ceux-ci. La nature et les proprietes des rayonnements utilises sont evidemment a l'origine des effets escomptes, mais egalement d'une large controverse societale et d'une reglementation specifique. Cette synthese bibliographique se propose de faire le point sur cette methode de preservation des aliments sur le plan de la nature des rayonnements utilises, de leurs effets sur les micro-organismes et des applications de cette technique.
